Whether made from scraps or produced by other means, African Americans transformed basic ingredients into flavorful dishes that influenced 19th century cuisine and beyond. Wisteria Perry, Associate Curator at the Mariners Museum in Newport News, Virginia will share her knowledge and give insight into this interesting aspect of history.
